As a morning gym goer, I rarely eat before working out which means I am usually ravenous by the time breakfast rolls around and would happily devour almost anything in the fridge. That being said, I do look for a balance in my morning meal, including a mix of carbs, protein and healthy fats - also, I generally eat breakfast at my desk so it has to be portable.
For months I’ve been in a toast and almond butter rut so when I spotted this banana bread baked oatmeal loaf on Young Married Chic I was keen to try it out! The verdict? It is huge, incredibly filling and delicious. Yes, it does require a bit of prep the night before but it is worth it, trust me.
Banana bread baked oatmeal loaf - Young Married Chic:
Ingredients:
1/2 cup liquid egg whites
1/2 of a small banana, smashed
1/4 cup of unsweetened apple sauce
1/2 tsp vanilla extract
1/2 cup of quick cook oats
1/8 tsp baking soda
1/8 tsp baking powder
Cinnamon
Sweetener (stevia, maple syrup or honey)
Directions:
Preheat oven to 375
Mix together egg whites, banana, apple sauce, and vanilla. In a separate bowl, mix together oats, baking soda, baking powder, cinnamon, and sweetener (the spices and sweetener are all personal preference)
Mix wet and dry ingredients together and pour into a greased mini loaf pan or muffin tin
Bake covered with aluminum foil for 25 minutes, and then uncover and cook for another 3 - 5 minutes, or until the top springs back when touched
Enjoy immediately or let cool
Note: I covered mine overnight and then reheated it in the microwave this morning with no problem. Also, I suggest topping it with almond butter.
