I am trying to eat more B vitamins and while I always eat a boatload of spinach, my consumption of broccoli is pretty low since I’m not exactly crazy about it. Last night I decided to make an effort and found a recipe (pictured) from popular vegan blog Oh She Glows.
This dish is a combination of roasted broccoli, cauliflower and chickpeas which are then tossed in a lemon tahini dressing.
The salad recipe can be found here and the dressing that I used is here. Note, Oh She Glows also has a suggested dressing but nutritional yeast kind of weirds me out.
